Homemade Pasta with Einkorn Flour

Today I want to share with you how to make your own fresh, homemade pasta with Einkorn flour. Einkorn flour adds a slightly nutty and sweet flavor to the pasta and leads to a very soft texture. Absolutely delicious and best of all, it’s an even healthier alternative to whole wheat pasta with better flavor and only a few ingredients!

While I love a good celebratory meal like Gumbo and Muffaletta for Mardi Gras, most meals in my household are made using few ingredients that I have researched and know will benefit in my family’s health and tastes delicious.

Why Einkorn Flour?

Einkorn Flour is the earliest form of cultivated wheat. It is an ancient grain that has not been hybridized, higher in protein, and with a lower level of gluten. If you are slightly gluten insensitive (not with celiac) I encourage you to try it out.

Earlier this week I shared my family’s recipe for homemade pasta sauce. I love cooking from scratch and knowing exactly what ingredients I am putting into my and my family’s bodies. This homemade pasta is excellent with homemade pasta sauce or a creamy garlic sauce. I may even start working on a chicken noodle soup recipe with it soon!

Kitchen Tools You May Need

Large Bowl

Measuring cups

Pasta Dryer (or towels to lay the pasta out to dry)

Pasta Maker (I have an Atlas Pasta Maker or you can just use a rolling pin and knife)

Grain Mill (optional)

Einkorn Wheat Berries (or already ground flour of your choice)

Ingredients for Einkorn Pasta

4 cups Einkorn Flour

4 eggs

4 tablespoons water

4 tablespoons Extra Virgin Olive Oil

Instructions

Grind the Einkorn Berries in a grain mill (skip this part if using pre-milled flour).

Add four cups flour to a large bowl.

Create a well in the flour and add Eggs, olive oil, and water.

Whisk the liquid mixture while slowly incorporating the flour until well combined and can form into a ball.

Cover dough in plastic wrap and let rest at room temperature for 30 minutes.

After the dough has rested for 30 minutes, divide into four equal balls and roll out on a lightly floured surface.

Run the dough through the pasta roller on the largest setting (mines a 1) repeating 5 or 6 times folding the dough over and adding flour if necessary.

Gradually reduce the setting and pass the dough through until pasta is at desired thickness (I prefer a thicker noodle and only go to a 4).

Once the dough is at desired thickness, roll it through the cutting blades of pasta roller.

Place the cut dough on a drying rack or lightly floured dish towel and let dry for an hour.

How to Cook Homemade Pasta

Bring a pot of salted water to a boil. Add pasta and stir making sure they don’t stick to one another. Boil for three to four minutes. Homemade pasta cooks faster than store bought noodles.

Strain and add your favorite sauce.

Storing Leftover Pasta

If you don’t end up eating all of the pasta in one night (like my family), you can store it in an airtight container in the refrigerator for up to two days or freeze for up to one month.
