This naturally sweetened dessert is perfect for breakfast or as a simple dessert! Prep the chia pudding the night before, top with a delicious homemade granola and warmed, spiced peaches in the morning for a quick homemade breakfast!
Springtime brings the most amazing fresh fruits and vegetables. We try to go blueberry, strawberry, and peach picking each summer. There’s something about picking your own fruits straight from the source that just feels right? You know?
Oh how in wish I had a peach tree in my own back yard! I was craving peaches the other day and didn’t have time to load up the kids to go on an adventure, so I made a quick run to the grocery store instead. And I am so happy that I did!
Chia pudding is one of those make ahead breakfasts I love to have on hand for those mornings that I don’t have time to make something.
What are chia seeds and why should you eat them?
Chia seeds are edible seeds from a flowering plant in the mint family. They are a good source of fiber, antioxidants, omega-3 fatty acids, iron, and calcium. They can improve digestive health, heart disease, and diabetes. I love to put them in chia pudding and smoothies.
Ingredients
For chia pudding:
- 3/4 cup Chia Seeds
- 2 cups Almond Milk (or coconut milk)
- 4 servings Vanilla Protein Powder
- 2 tsp Cinnamon
For the Peach Topping
- 2 Peaches, cut into bite sized pieces
- 1 tbsp Honey
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- Granola (Try my homemade granola recipe, Simple Maple Pecan Granola, or any store bought one that you love will work as well!)
Directions
- The night before mix 3 tablespoons chia seeds, 1/2 cup almond milk, 1 serving of vanilla protein powder, and 1/2 tsp cinnamon in a small bowl or jelly jar with lid in fridge overnight. I use 4 jelly jars.
- When ready to serve the chia pudding, cut peaches in to bite size pieces, and add to a skillet with honey, cinnamon, and nutmeg on medium heat. Let the peaches soften for 5 minutes.
- While peaches are softening, begin layering chia pudding and granola in a bowl or jelly jar. Once peaches are soften and to top.
- Grab a spoon and enjoy!!
Tip
Assemble Peach Crisp Chia Pudding in jelly jars the night before if you don’t want the peach topping warm. I layered granola, chia pudding, and then the peach topping. The granola is still crunchy the next day and the peach topping thickens and tastes amazing! Quick and easy to take on the go!

This looks delicious and I will try it today! I have one question…what do you consider a “serving” of protein powder? If a protein shake requires 2 scoops, is that one serving?
Yes, refer to the back of the container for one serving size. I have used a brand before that used two scoops and it was a little harder to stir, but had the same taste and consistency the next day. Enjoy!!!
