Peach Crisp Chia Pudding

Ingredients
  

For Chia Pudding

  • 3/4 cup chia seeds
  • 2 cups almond or coconut milk
  • 4 servings protein powder
  • 2 tsp cinnamon

For Peach Topping

  • 2 peaches cut into bite size pieces
  • 1 tbsp honey
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup Granola divided

Instructions
 

  • The night before mix 3 tablespoons chia seeds, 1/2 cup almond milk, 1 serving of vanilla protein powder, and 1/2 tsp cinnamon in a small bowl or jelly jar with lid in fridge overnight. I use 4 jelly jars.
  • When ready to serve the chia pudding, cut peaches in to bite size pieces, and add to a skillet with honey, cinnamon, and nutmeg. Let the peaches soften for 5 minutes.
  • While peaches are softening, begin layering chia pudding and granola in a bowl or jelly jar. Once peaches are soften and to top.
  • Grab a spoon and enjoy!!

Notes

Tip:
Assemble Peach Crisp Chia Pudding in jelly jars the night before if you don’t want the peach topping warm. I layered granola, chia pudding, and then the peach topping. The granola is still crunchy the next day and the peach topping thickens and tastes amazing! Quick and easy to take on the go!
