AMAZING GRANOLA RECIPE! EASY TO MAKE, NATURALLY SWEETENED, AND SUPER DELICIOUS!!!
I shared before that breakfast is my favorite meal of the day and I meant it! I could eat breakfast for EVERY meal and be totally happy with it for the rest of my life. I think it’s the fact that you can pick salty or sweet depending on your mood. There are omelets, waffles, steel cut oats, Dutch baby pancakes, French toast, BACON, chia pudding, avocado toast….need I say more?
Not to mention the LOVE I have for cereal, which I try to keep away from as much as possible! In our house it’s a major treat to have cereal and it’s a huge treat for the kids birthdays. My husband takes the kids to the grocery store the night before their birthday and they get to pick out NAME BRAND cereal. Yup I said it, NAME BRAND. That stuff is expensive and oh so bad for you!
I have tried to replace it with homemade granola and for the most part it works until they get a taste of the marshmallow filled stuff again and then I have to try all over again. I put together different flavors each time I make it to keep them on their toes in hopes they forget about the sugary sweet stuff from the store.
I made coconut pecan granola the last time, but I thought I would switch it up with just a few ingredients and it was a huge hit.
Ingredients
- Raw oats
- Pecans
- Unrefined Coconut Oil
- Pure Maple Syrup (or honey)
- Chia Seeds
- Ground Cinnamon
- Vanilla Extract
- Salt
- Ground Nutmeg
Instruction
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a medium bowl, combine the raw oats, pecans, chia seeds, ground cinnamon, ground nutmeg, and salt.
- Warm coconut oil in microwave or sauce pan. Drizzle in the coconut oil, maple syrup, and vanilla extract. Stir until combined.
- Spoon the granola onto the lined baking sheet and press mixture flat (helps with clumping).
- Bake for 10 minute, mix and press mixture flat with the back end of a spatula. Bake for up to an additional 15 minutes or until golden brown.
- Let cool for 45 minutes before serving or place in an airtight container for up to a week, if it lasts that long!
What to eat granola with?
- In milk as a healthy replacement for a bowl of cereal.
- A topping for yogurt with fruit.
- A topping for ice cream.
- On top of muffins or French toast.
- On top of spiced apples.
- Layered with Peach Crisp Chia Pudding
