Warm coconut oil in microwave or sauce pan. Drizzle in the coconut oil, maple syrup, and vanilla extract. Stir until combined.
Spoon the granola onto the lined baking sheet and press mixture flat (helps with clumping).
Bake for 10 minute, mix and press mixture flat with the back end of a spatula. Bake for up to an additional 15 minutes or until golden brown.
Let cool for 45 minutes before serving or place in an airtight container for up to a week, if it lasts that long!
