Simple Maple Pecan Granola

Ingredients
  

  • 4 cups raw oats
  • 1 cup pecans
  • 1/2 cup coconut oil unrefined, melted
  • 1/2 cup maple syrup
  • 1/4 cup chia seeds
  • 1/2 tsp cinnamon ground
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.In a medium bowl, combine the raw oats, pecans, chia seeds, ground cinnamon, ground nutmeg, and salt.
  • In a medium bowl, combine the raw oats, pecans, chia seeds, ground cinnamon, ground nutmeg, and salt.
  • Warm coconut oil in microwave or sauce pan. Drizzle in the coconut oil, maple syrup, and vanilla extract. Stir until combined.
  • Spoon the granola onto the lined baking sheet and press mixture flat (helps with clumping).
  • Bake for 10 minute, mix and press mixture flat with the back end of a spatula. Bake for up to an additional 15 minutes or until golden brown.
  • Let cool for 45 minutes before serving or place in an airtight container for up to a week, if it lasts that long!
